Rotating Rack Oven also called industrial oven, rotary oven, since they are usually used for baking mass production and count on several trays that rotate continuously. These types of ovens include a mechanism that introduces the steam needed for baking bread and has a ventilation system inside that is responsible for distributing the heat. Its great advantage is that it allows cooking in a balanced way during the process, without great imbalances or decompensation in the interior.

The rotating rack oven offers versatility, but with a different process. With the steam they can apply they are able to bake bagels, or toast buns.

Our rotating rack ovens will finish products faster and more evenly, thanks to its rotating trolley, its fans and its ability to also bake with steam, the chamber and air flow system in our ovens allows for evenly air distribution throughout the baking process, which translates into production efficiency. Depending on the country and the associated costs, you can choose gas or electric. The gas models’ versions are slightly more expensive than their electrical version.

Rotating Rack Oven

Convection Ovens these ovens contain a ventilated system in their chamber which works as a homogeneous heat distributor. These types are ovens are the most common professional ovens in the market and can be used in restaurants, bakeries, C-Stores, Coffee Shops, etc. They are vertical ovens and often made from stainless steel. All our convection ovens are built with stainless steel 304A, which allows for cooking pastries and protein foods.  The convection system enhances the cooking process by heating the cooking chamber faster, thus saving time and energy.

Combi or Combination Oven is the most versatile oven in the market. These ovens are relatively new, they have been around in the market 20 years approximately.  A combi oven is an oven with three functions: convection, steam and combination cooking. In the convection mode, the oven circulates dry heat – ideal for pastries and breads. The steam mode injects water into the oven to poach fish, rice and vegetables. The true genius behind the combi oven is the combination mode which uses both dry heat and steam to maintain exact humidity levels, thus giving you more control of the moisture levels in food. These levels are adjustable from 0% to 100% of possible maximum relative humidity, a term used to describe the quantity of water vapor that exists in a gaseous mixture of air and water. Our line of combi ovens come with high tech touch screen panel, automatic washing system and programmed recipes to guarantee an easy to use experience.

Deck Ovens, the second most used type of oven, these ovens rely on radiant heat – transfer of heat to the product through the heated air of the baking chamber, and conductive heat – transfer of heat directly into the product from the baking stone or deck. Deck ovens have even, consistent heat that make it ideal for controlled baking. They will usually include features like steam injection and a venting system to adjust the humidity inside the baking chamber. If the deck oven consists of more than one chamber, each chamber can bake simultaneously each at a different temperature. This oven is great for pizzas and artisan bakery. If you tend to have artisan bread stocked in your bakery shop, then this oven is a must have.
